Living at Meridian gives you weekly access to the Eagleview Farmers Market at Town Center – the perfect place to buy fresh, local produce. Growing Roots, the umbrella organization for the Eagleview Farmers Market, shares many recipes for using local produce to create delicious meals. This month, Growing Roots Partners has shared a recipe for a Vietnamese hoagie, otherwise known as a bahn mi.

There are many different variations of the bahn mi – just like the hoagie. Bahn mi sandwiches are actually a combination of cultures. Influenced by their French colonization, the typical bahn mi has a smattering of pate and mayonnaise. The Vietnamese lend an Asian flavor: fish sauce, cilantro and lightly pickled veggies, typically carrots.

Constructing an Eagleview Farmers Market bahn mi me:

Step One: Prep the pork meat balls. Growing Roots followed this meatball recipe, deliciously studded with lots of chopped basil and with a healthy dose of fish sauce. Both Lindenhof Farm and Canter Hill Farm have ground pork, and Old Homestead Farm has been well stocked with the basil.

  1. To build the bahn mi, start with a baguette from Saint Peters Bakery and spread with a tasty layer of sriracha spiked mayo. Next, a few mint leaves, then cilantro and a pickled veggie (carrots are traditional).
  2. And now for the protein: Growing Roots’ pork meatballs, and Canter Hill Farm duck liver pate, which is amazing.
